1. Participates in, and supervises in the preparation of all cold sauces, dressings, appetizers, salads, canap├ęs, display platters and arrangements of cold buffets and all cold food items in accordance with established Recipe Cards and methods.

2. Checks daily menu and function sheets to ensure appropriate production levels.

3. Designs and prepares ice carving and artistic decor pieces.

4. Ensure that all Kitchen / Restaurants Outlets are sufficiently supplied with their requirements.

5. Ensure that all cold dishes are prepared in attractive and appetizing manner.

6. Supervises and participates in "Buffet set up" and Decoration.

7. Ensure during meals periods that buffet table is kept replenished and attractive for duration of service.

8. Ensure that cold foods, sauces, dressings left over from Buffet are stored according to established procedures.

9. Ensures portion control policy/standard plating instruction is adhered to.

10. Ensures section is kept in clean and orderly fashion.

11. Ensures that all equipment / utensils are correctly handled and maintained.

12. Coaches employees in his section the "Clear as you Go" method of working.
